This is a recipe that my dear neighbour and friend gave to me a few years back. He is no longer with us, having left this earth after getting cancer. I really miss him. He was a loving jokester who at first was rough around the edges but in the end he could wear any one down with his kind heart, and wonderful sense of humour :)
We were always sharing food. He called me meals on wheels because after his diagnosis I would take him and his wife dinner every night. He did all the cooking up until then. He was a wonderful cook and introduced, or should I say, made me eat things I would have never tried :)
He made the best vegetable soup I have ever ate in my life. It took me a quite a bit of prodding to get that soup recipe from him. He said it was his secret recipe. I thought he was pulling my leg as he often did. After his funeral, his kids were talking about that soup, and how he would never give any one his “secret” recipe. I have honoured that and always kept it a secret too. Although when I make it I will carry some to his wife. She is a wonderful caring, giving person. God blessed me with these neighbours :)
This “Summer Salad” is another recipe that he gave me. I have kept it in his hand writing, the way he gave it to me. It always makes me feel close to him to see his handwriting.
I promised Diana that I would post it for her. Since this is not one of his “secret” recipes, I am sure he won’t mind.

He certainly has. I have a few friends my age but most of my dearest friends are decades older than me. Like my neighbour. The friends my age tell me I collect old people. I don’t know why but even as a teen my friends, close friends, were decades older than me. The sad part about that is that they leave this earth because of that age. It is heartbreaking. I look around and there just aren’t that many of them left. It’s one of those things I don’t understand, and have asked the LORD why. The best friend I ever had left us in 2018. Her kids were older than me. I don’t know. I know they are with God, and Jesus. That makes me happy for them :) For me, well, not so much :)

Same! Most of my friends were way older than me, but it never fazed me for I enjoyed their company more than the younger ones. I agree about the part in which they leave because of age. It’s always sad. God has blessed you with a lot of wonderful people, close friendships, strong ties, and everlasting memories. He’s just amazing!

It is very good. One of my favourite, and so easy to make. Keeps well in the fridge but usually doesn’t las too long because we eat it up :) I ask the LORD to bless you as well. I was thinking about your son, and hope he is doing well also :)

Thank you. I think so. His girlfriend as I’ve mentioned, sadly wants no part of me so I seldom hear from him. Last we spoke his company is hard hit by the situation now and he has not had a paycheck in weeks! At least they are still providing insurance.

I remember the girlfriend issue. I prayed that God will resolve that issue, and soften her heart. I’ve added your sons job issue because of this virus. I am thanking him for it too. It hurts our hearts when we don’t hear from our kids. Typing that makes me think how God must feel when He doesn’t hear from all His children. Not that I even come close to understanding His love or what God feels but more in a perspective sort of way.
